Apple pie recipe

The apple cake is one of the desserts that you like more, both for adults and for children. It is delicious for breakfast with a cup of milk or hot chocolate. For the snack of children, for an after lunch or after dinner, but also for a snack at all hours.

In the meantime, I give you here the recipe that I most like, but there are lots of recipes for this cake, including the tart, or the classic strudel. It is cooked in many parts of the world, each with its own variants, but all always very tasty.

Apple pie with mascarpone

This version of apple pie, I prefer it because instead of butter, you put in the mascarpone, this way is more light.

Ingredients:

3 golden apples (or pippin

250 gr of flour type 00

250 grams of mascarpone cheese

150 gr of sugar

4 eggs

1 sachet of yeast for cakes

a pinch of salt

a pinch of vanilla sugar

These doses are for a cake tin of 28 cm.

Preparation:

peel and chop the apples

with a whisk, beat the eggs with the sugar and the pinch of salt until it becomes a frothy mix. In a bowl, put now the mascarpone and mix with a wooden spoon to make it softer by combining occasionally with a few spoonfuls of the egg mixture and sugar. Combine slowly around the compound, mixing well. At this point unite slowly the flour and the baking powder, stirring well to avoid lumps. Put now in the compound in the pieces of apple that you have prepared before. Grease and flour a cake pan of 28 cm, put the mixture into the cake tin levelling out. Heat in the meantime the oven at about 180 degrees. The cooking time for the cake will be an hour. It is very for a cake, but must be cooked very well, especially on the inside where are the apples, and then to prevent the crust of the cake is black too and burn because of the higher cooking time, after 35/40 minutes placed on the top of the cake with a sheet of aluminum foil. This will allow you to bake perfectly in our sweet, without the burn.

Apple pie classic recipe

I wrote the classic recipe, because for me this is the classic apple pie, but every province, city, even every country has a variant of it, even if it changes only one ingredient, and it remains the classic recipe.

Ingredients

4 golden delicious apples or pippin-cut into thin slices

300 grams of flour

gr 180 sugar

gr 50 of butter

3 eggs (preferably at room temperature)

1 sachet of yeast for cakes

1 glass of whole milk

the zest of a lemon and 1 whole lemon.

Procedure:

The first thing is preparing the apples, which should be made to rest a bit. Then, peel and cut into thin strips that are then put in the juice of the lemon and leave for about an hour,

In this version, the eggs should be divided between the yolk and the egg white. The egg yolks, beat with the sugar,while egg whites can be mounted to the snow. Prepared from the two mixtures with a wooden spoon, mix gently, stirring the mixture from below to avoid that you unmount the eggs. Join at this point, the flour, the yeast, the butter (that we have previously worked to make it more chopped, the zest of half a lemon grated, and the milk, mixing gently until thoroughly mixed.

Pour the mixture into a springform pan of 26 cm, buttered and floured and place on top of the surface and the slices of apple ,spreading in a radial pattern, being careful not to go too deeply into the batter, Let it cook about 30 minutes at 180 degrees.

A board for cooking, which also applies to every other type of cake. Try to never open the oven in the first 20 minutes of cooking. You will avoid so that your dessert is lower too, and if it is then not cooked well inside.

Tart apples

Another great classic, the tart. Also this is a dessert very easy to make and is sure to effect. Are those desserts that make us rediscover the flavours of a time, and re-think our grandmothers who made them often.

Ingredients:

5 apples, preferably pippin

250 grams of flour

150 gr of butter

100 gr of sugar

2 egg yolks

1 envelope of vanillin

1 lemon

about 200 gr of jam (your favourite)

g 50 icing sugar.

Preparation:

first, you need to make the pastry which will form the basis of our cake. Then we will make a dough with the flour, the sugar, the softened butter, two egg yolks, and vanilla. Working with the hands on the pastry form a dough hard enough. This should be kept in the fridge for at least an hour. After this time, with a rolling pin to flatten the dough until you obtain a pastry round about an inch high, that you place in a cake pan already greased and floured, removing from the board the excess dough. Now put on the surface of the jam and give it evenly.

Above the jam, put the slices of apples that you have already prepared in advance and distribute in a radial pattern, sprinkle with the icing sugar and add the juice of a lemon. If there is advanced of the pastry, form some strips that you put on the surface so as to form a grid rather large. Preheat the oven to 200 degrees and bake the pie in preheated oven for 15 minutes. Let it cool down a bit on the tart before serving, this will prevent it from crumbling when cut in slices.

Apple pie and ricotta cheese

This version is even more soft and delicate.

Ingredients:

300 gr of flour 00

gr 240 sugar

gra 250 of cow ricotta cheese

3 eggs

2 apples

1 sachet of yeast for cakes

half a glass of milk

a pinch of salt

a pinch of cinnamon

icing sugar as required.

Preparation:

Beat the eggs with the sugar and a pinch of salt. You incorporate slowly the flour, then the ricotta cheese and the milk, mixing it all together. Now one of the two apples, cut the pieces fairly small and andatela to add to the mixture along with the teaspoon of baking powder, mixing everything well.

Grease and flour a cake tin and pour the mixture. The other apple and cut down to strips that are placed on the surface of the cake. Sprinkle with a pinch of cinnamon and bake in a preheated oven at 180 degrees for 50 minutes. Let it cool and serve it.

Apple strudel

This sweet is typical of Trentino Alto Adige, stuffed with apples, raisins, pine nuts, the whole flavored with cinnamon. Also this is located in different versions.

Ingredients:

for the dough you need:

250 grams of flour

gr 50 milk

gr 50 of butter, melted

1 egg

1 pinch of salt

a splash of white vinegar.

For the filling you need:

5 golden delicious apples

gr. 20 of butter

150 gr of sugar

gr 50 of breadcrumbs

the peel of a lemon, grated

150 gr of raisins

100 gr of walnut kernels

100 gr of almonds

1 teaspoon cloves

2 teaspoons of cinnamon

Preparation:

First, prepare the dough of the strudel. Mix the flour with the egg, the pinch of salt and splash of white vinegar. Join at this point, the milk and the melted butter and the egg, work in hand until you get a firm dough, which has to be put in a bowl, covered and put in the refrigerator for about an hour. We prepare now the filling.

Cut and chop in small pieces the apples, put them in a bowl with the juice of half a lemon and the sugar. Chop the walnuts and the almonds, soak the raisins in warm water for about ten minutes, and add to the apples, the walnuts and the almonds, the raisins and dried well, the cloves and ground peel of a lemon grated.

Take now the mixture that we had prepared, and with a rolling pin try to make a dough very thin, brush it, then the dough with the melted butter and the bread crumbs. Join at this point the mixture with the apples and spread out evenly on the pastry. Start now to roll the pastry with filling up the to wrap it all. Before putting it in the oven, in the meantime you will have warmed up to 180 degrees, brush the our strudel with milk and a beaten egg yolk.

Cook for about 40 minutes and it cool before serving.

Apple pie and yogurt

This recipe is very light and easy to prepare.

Ingredients:

gr 260 of flour type 00

1 jar of white yogurt

140 gr sugar

g 70 butter

3 apples type golden or pippin

3 eggs at room temperature

1 sachet of yeast for cakes

Preparation:

prepare meanwhile the apples. Half of the chopped small and the other half into thin strips and serve as a gasket. Both the pieces that the strips are placed in a container with the juice of a lemon and let it sit in the fridge while you prepare the dough of the cake.

Break the eggs and mount it with a whisk together with the sugar, add the butter warmed and the yogurt, then the flour a little at a time and the sachet of yeast for cakes. United now to the mixture, the apples cut in small pieces and mix well.

In a springform pan of 26 cm, buttered and floured, pour the mixture leveling them well and above going to garnish with the slices of apples that you have already prepared. Bake at 180 degrees for 45 minutes. Let cool the cake in its mold before it is put on a platter and serve.

Apple Pie

This is the american pie for excellence, one that puts a cool down on the sill of the window, and that we have seen in so many cartoons or comics of Walt Disney. And’ a true american institution, beloved by all. I propose here the original recipe, which had over time and in various places, a number of variants, even if of little account.

Ingredients:

for the dough you need:

300 grams of flour type 00

140 gr butter at room temperature

gr 50 sugar

100 gr of water

just enough salt.

for the filling you need:

4 apples

gr 120 sugar cane

1 egg

gr. 20 of butter

the juice and the grated rind of half a lemon

1 teaspoon of cornstarch

cinnamon, cloves and nutmeg powder enough

Preparation:

you start to mix the flour with the sugar, add the butter in flakes and knead with your hands, adding a little water to form a ball with the consistency of soda. Put the mixture in a container, cover it with cling-film and put it in the fridge for at least half an hour.

We prepare now the filling of our pie.

Peel the apples and cut them into thin slices that are in a container with the lemon juice. Join now the grated lemon rind, cornstarch, sugar and a pinch of powdered cloves, cinnamon and nutmeg, stirring well so that the apple slices to take the various flavours of the spices.

We take now the ball of dough that we had put in the fridge work a few minutes with your hands, and let us divide it into two parts. With a rolling pin to form with the first half of a disc of about 30 cm diameter which we will place in a cake tin diameter 26 cm by adhering the paste to the edge. We now the stuffing that we had prepared, and place it above all the other disk of dough to a close, trying to fit in and overlap the edges of the two sheets. Brush now the surface with a beaten egg, make a few incision in the dough the top and distribute a little bit of sugar on the surface.

Bake in the oven that you have already brought at 180 degrees for 20 minutes, after which brush the again the surface of the cake with a little milk and let it cook for 10 more minutes. Serve warm.
