Chicken curry recipe from Jamaica

Today I offer you a recipe that a friend of mine sent me from Jamaica. This is a delicious dish and still shouldnโ€™t be particularly heavy if we relate it to other types of food.

Ingredients

  • 2 1/2 pound(s) chicken (breast would be better);
  • 2 shallot stem(s), chopped;
  • 3 sprigs thyme;
  • 1 medium onion, chopped;
  • 1 medium carrot, chopped;
  • 1 small Irish potato, diced;
  • 4 garlic clove(s), minced;
  • 1 teaspoon black pepper;
  • 1 teaspoon salt or to your liking;
  • 2 teaspoons chicken seasoning;
  • 1 teaspoon MSG;
  • ยฝ scotch bonnet pepper, crushed;
  • 1 tablespoon(s) curry powder;
  • 3 tablespoon(s) vegetable oil;
  • 2 1/2 cup(s) water;

Preparation

  1. Remove skin and cut chicken into bite-size pieces and wash in a mixture of white vinegar and water.
  2. Season chicken with chopped shallots, onion, garlic, black pepper, salt, chicken seasoning, MSG and ground scotch bonnet pepper. Cover and let marinate in the refrigerator for about 1 hour or overnight if preferred.
  3. Heat the cooking oil in a heavy skillet, add the curry powder and let it cook or as we call it โ€œburnโ€ for about 1 minute.
  4. Add the seasoned chicken and cook, stirring, for about 5-10 minutes.
  5. Pour in the water, carrot, Irish potato and thyme, stir then cover and let cook for about 40 minutes.

Considerations

If the water runs out, add more gradually to prevent the meat from burning. Serve with white rice. You can also adjust the seasoning to your liking, you may need less or more, itโ€™s really what you like or prefer.
